天門冬を糖蔵する法、明治十五年七月二十九日、東京日々新聞農局誌信、天門冬ハ十月頃海辺ノ草間中ニ自然生する新根を撰ミ取り、能く土をあらひ去り、沸湯に浸し置、冷へて后ち天門冬の中心の筋をとり、苦味を去りて稀き灰汁へ水一升に灰三合許に浸すこと二時間許なる時ハ、苦みを脱すること妙なり、而して清水に一時間浸し笊に取り揚け、其侭右に述る糖製を以て緩火にて煮る、三日許法の如く磁壺に貯ふ
