此等ハ掌中ニ容レ揉ミ軟ケ核ヲ抜出シタルヲ以テ上品トス、又剥キ去リタル粗皮ヲ柿ト皮ト号シ皆喂食ス、或ハ割リ柿ト名ツクル者アリ、此等ハ都テ収蔵ノ時破碎シタル屑ヲ干シ上ケシ者ニシテ其土地ノ人年内茶菓子トナシ之ヲ用フ、故ニ多ク世間ニアラズ、屑ト雖トモ粉ヲ生シ、其味至テ佳ナリ、下略、○柿渋ハ七月中旬、柿未ダ熟セザル前採リ、粗皮共ニ碓中ニ入レ密細ニ槝キ碎キテ水ヲ加入シ、暫時浸シ置キ、然ル後掬ヒ揚ケ、丈一尺巾二尺五寸程ノ竹ヲ以テ網ミタル梁ノ中ヘ入レ、車機ノ力ヲ以テ柞漉シ、其出テタル渋汁一升ヘ水二升ヲ加ヘタル、最上トス、然レトモ通常ハ水三倍ヲ混スルナリ、又此ノ如ク為タル後初シテ搾リタル屑ヲ水ニ浸スコト一昼夜ニシテ再ヒ右ノ器械ヲ以テ尽ク揉ミ漉ス時ハ薄キ渋汁ヲ発ス、此汁ニハ水ヲ混スルコト渋一升ニ水一升ヲ以テ定規トス、之ヲ第二番ノ渋トス、此ノ如ク為スコト三度ヲ以テ止ミ水ヲ加フルハ沢ヲ遂ヒ減スルナリ、然ル後陶気或ハ桶ヘ盛リ置クコト、五六月ニシテ之ヲ使用即時ニ用フルコトアリト雖トモ其功能少シ、故ニ農期ヲ経タルヲ良トシテ渋ノ善悪ヲ論スルハ唯水ノ加減ニ関ルノミ、又数年貯ル時ハ水気蒸発シ減ルトコロノ渋気自然ト凝リ固ナルコト殆ト油ノ凝固シタルガ如シ、故ニ其得失ヲ考ヘテ当時ハ酒樽ニ入レ、泉池等ノ深ク水中ヘ沈メ置クコト屡アリ、夏時暑気甚
