各製醃品(ツケモノ)、武蔵国荏原郡森村産、十年博―(覧会)、小関勇次郎、梅醤、梅子ノ熟セルモノ四斗、食塩五升ヲ和シテ醃蔵シ、凡八日経テ又塩一升五合ヲ加ヘテ器ヲ換フ、之ヲ二番漬ト云フ、又八日ヲ経テ又一升ヲ加ヘ器ヲ換フ、之ヲ三番漬ト云フ、又八日ヲ経テ更ニ一升ヲ加ヘ器ヲ換フ、其時々梅醤ヲ別器ニ貯ヘ、之ニ紫蘇ヲ投シ手ニテ摩擦シ其汁ヲ梅実ニ注下シ、連日之ヲ出シ揉摩ス、七八日ニシテ梅実悉ク紅色ヲ表ス、之ヲ日乾スルコト凡三日、紅色弥美ナリ、乃之ヲ蔵シ、其麋爛スルヲ候テ、梅仁ヲ去リ、羅篩(キヌフルヒ)ヲ以テ梅肉ヲ濾過シ、之ヲ「ウラコシ」ト云フ、糖霜ヲ和シ食用ニ供ス/○治瘰癧雞蛋開一孔入緑萼、梅花将開者、七朶■口飯上蒸、熟去梅花食蛋、毎日一枚、七日全〓、{【本草綱目拾遺】、朱書}
