桜漬（さくらづけ）｛【四季漬物早指南】、朱書｝さくら中開（ちうかい）の枝（ゑだ）を切花（きりはな）ばかりつミて塩（しほ）三升に水（ミづ）三升を入て煎（せん）じ一夜（いちや）さまして花とひたひたに漬（つけ）て軽（かる）く押（おし）をかける、近来（ちかごろ）ハ所々より出（いづ）れど隅田川（すミだがわ）の桜（さくら）を名物（めいぶつ）とす
