桜花醃、室町二丁目産、十年博覧―(会解説)、早川佐七、製法、桜花ノ半ハ開キタルモノ及未蕾ヲ破ラサルモノ等ノ蔕茎ヲ連ネテ摘採シ、塩及梅醤ヲ和シテ、花八貫目ニ梅醤三升、食塩四升ヲ度トス、樽ニ盛リ、其上ニ圧板ヲ置キ、圧石ヲ加スレハ三日ヲ経て其嵩(カサ)樽ノ半ヲ減ス、乃他樽ニ漬ケタルモノヲ合セテ一樽トナシ、後圧板ヲ加ヘ、其上ニ小材、枕木ト云フ、二本置キテ蓋ヲナシ、紙ヲ以テ糊封シテ空隙ナカラシメ、炎熱ノ候、塩汁乾涸スルトキ封ヲ開キ、梅醤ヲ適宜ニ注キ、前法ノ如クシテ蔵ス、一年或一年半ヲ保存ス、用法ハ桜花四五弁ヲ茗碗中ニ投シ、熱湯ヲ注下スレハ、香気馥郁トシテ、其味淡薄、宿醒ヲ解キ、胸膈ヲ開ク、漬花、長野県信濃国筑摩郡駒ヶ根村産、十年博覧―(会解説)、斉籐末有、製法、桜梅桃茶菊薄荷等各其時候ニ至リ半開ノモノヲ採リテ製ス、但予シメ白梅ノ肉ヲ小筺ノ底ニ塗抹シ、而シテ筺中に区画(シキリ)ヲナシ、各種ノ花ヲ梅肉中ニ装スルトキハ、歳月ヲ経ルモ其色変セス、自ラ塩味ヲ含有ス、之ヲ用フルニ当リ茗碗ニ一二花ヲ投シ、熱湯ヲ注クトキハ、花弁展シテ香気芬芳、以茶ニ換フヘシ、桜漬、【漬物塩嘉言】、さくら中開の枝を切り花ばかりつミて塩三升に水三升を入て煎じ、一夜さまして花とひたひたに漬て軽く押をかける、近来ハ所々より出れど、隅田川の桜を名物とす/桜花ツケ、センジシホニ入レ、ドブツケニス、上品ノ塩ニテ一二日軽ヲシニシ、シホリ上ケ、或流、カハキ、梅スヲ少シ入レカキマワシ、フタ■ニ入オク
